0 0 Thai Red Chicken & Mango Curry Sometimes there's nothing nicer than a bowl of creamy curry on a cold wet day. I've always liked fruity curries and as I had been given a Mango in my Pantry bag, I thought about using it in my favourite Thai curry. I found a recipe that I adapted to suit what I had available and it worked really well. It's creamy but not too sweet, with just enough heat to satisfy the taste buds without blowing your head off. I used a medium curry paste but obviously you can adapt this to suit you and your families tastes by using a milder or hotter one. You can use tinned or frozen Mango- just defrost beforehand, or If you don't have a mango just leave it out altogether, it will still taste great. The choice is yours. I used the Ninja Foodi to air fry the chicken first, as I prefer the crispy coating this gives, and then sautéed the curry itself, but you could PC instead, or just sauté if you prefer to skip that step. This could also be made on the stove or the Slow Cooker by just adjusting the method slightly-instructions are at the bottom of the page. 0 0 Air Fryer Chicken Nachos This recipe is so versatile. It makes for a great midweek dinner....or as one of the best TV snacks ever! Perfect for movie nights, watching the footy in the afternoon, a picnic in the garden, or lounge, if the weather turns cold, or as part of a sharing platter for a midweek feast. I used Chicken but you can totally substitute this for minced beef, pork, or leave it out altogether and just have the classic combo of cheese, tomato salsa, guacamole and sour cream. The choice is yours. You could also use cooked and shredded chicken and miss out the 1st steps altogether.The fajita seasoning mix can be found on the website and at the bottom of the page. It's great to make a batch and keep the remainder for another recipe, or you can use a pre made packet mix. The final stages of the recipe are best cooked in 2 batches as you want nice crunchy Nachos, which you won't get if you crowd the pan - the Air fryer needs to circulate the air to do its job correctly. This stage take minutes so don't worry about not serving it together- just cover the 1st batch with foil for a few minutes and it will be fine. 0 0 Chicken & Mushroom Cacio e Pepe This is a creamy one pot dish thats bursting with flavours. Cacio e pepe sounds posh but it just means "cheese and pepper" Traditionally served mixed through pasta but, as I had none, and in keeping with the ethos of FYF, I substituted it with chicken & mushrooms with a side of New Potatoes. 0 0 Paprika Hassleback New Potatoes New Potatoes are amazing for their fresh buttery flavours, but sometimes you just crave them with a little bit of spice and that's were this Paprika spice blend delivers. It's a little touch of sweet with just the right amount of spice to pep up your taste buds. Of course you can tailor it to suit your tastes by using less paprika, or a smoked paprika, which will add an extra depth of flavour, for a bit more spice try adding some chilli to the mix, or leave those flavours out altogether, and just dress them with a little salt n pepper. This is a lovely side dish that adds extra dimensions to your humble potato. I've used the Airfryer for this recipe but these can also be done in a conventional oven too. Slicing them into hasslebacks means they cook quickly, the spice blend gets into all the little nooks n crannies, and makes them look good too, but you can leave them whole if you prefer. 0 0 Roasted Garlic (baked) This is meal prep that is so easy to do and gives fantastic results, Why bother with meal prep? I hear you ask. Because It will take your dish to the next level. It's great to add to butter, pasta, pesto, curries etc. Roasted garlic cloves make food taste amazing. It is softer, mellower, and almost sweet in comparison to raw garlic, which some can find too strong or even bitter in comparison. I promise you, you won't want to use it any other way once you've tasted the difference. Baking it low and slow gives the best results. You want to soften the cloves and caramelize the tops until they are golden brown. I find popping them in at the same time as I'm roasting potatoes or meat etc makes it more cost effective too. It can keep for a few days in the fridge and can be frozen too for convenience. You can add herbs, chilli flakes etc too but I've just left it plain this time. 0 0 Air Fryer King Prawn Tacos King Prawns can be expensive but now and again, you get them on offer or reduced, and you want to make the most of them without ruining their delicate flavours. This recipe shows them off perfectly. I've kept this very simple by just using a few ingredients to marinade the Prawns with and pairing it with a little salad and some crunchy Tortilla crisps for added bite. Tacos are a great summer dish that's light, full of flavour and very versatile. You can add any toppings you fancy or keep it simple with just a green salad. The choice is entirely up to you and your families tastes. You can make it fun by putting everything on a board and letting them fill their own Taco shells, or wrap in greaseproof or foil for an authentic street food vibe. 0 0 Cheesy Cottage Pie (in the Ninja Foodi) A timeless classic that is loved by families from all corners of the country, but we all have variations of the ingredients, depending on which part of the country we live in. This recipe takes it up a notch by using the modern convenience of the Ninja Foodi to Pressure cook the potatoes before cooking the mince in a more traditional way.....you can PC the mince if you prefer but I didn't feel it was necessary, as I like to allow the flavours to develop using the Sear/Saute function. The flavours of the seasoning mix are subtle but give depth to the dish, which is topped off with creamy mash and sharp cheddar. It's a very adaptable recipe- I didn't have a whole pepper so used a mix of 3- red,green, yellow. I also used a mix of cheeses- mature white and red cheddar that I had in the freezer. I used 1/2 a bag of pre diced carrot n swede too as I found it lurking in the freezer. I'm sure your family will be requesting this to be added to your menu rotation. 0 0 Steam Airfried Basa Fillets with a Medley of Mediterranean Vegetables This is a one pot dish that's oh so simple but bursting with fresh flavours. It's perfect for a date night, quick lunch or just a light bite. I decided to use the Steam Airfry as both the potatoes and fish were delicate so needed a gentler form of cooking, but you can totally do this in your oven or on the hob if you dont have the Foodi. I've used basa fillets(river cobbler) as they are relatively cheap,mild in flavour with a firm texture that's robust enough for the Airfryer but you can totally change this for salmon,trout or any fish you prefer.... If using skinless fish then place it on some parchment paper so it doesn't fall through the grill rack onto the vegetables below. I cooked the fish for 8 minutes but it probably could have done with a minute or 2 less....but its all a learning curve isn't it? So bear with me whilst we learn together. If doing more than 2 fillets then best to do them in batches so they cook evenly. I added a little extra veg to the pot too, that needed using up so feel free to do likewise, or just ignore. This is a very easy dish to adapt to your tastes. Swap the fish, swap the veggies, swap the olives for green beans or leave them out if you dont like them etc. Why not give this a try and let us know how you get on in the comments below.
